Summer peach cake

A light cake, filled with delicious peach pieces that can be enjoyed warm or cold. This simple to create cake brings you the flavors of summer and compliments perfectly balmy days spent enjoying lunches and dinners with friends and family.

Ingredients required

  • 3 large eggs

  • 170grams butter softened

  • 1 cup sugar grams

  • 1 teaspoon salt

  • Half teaspoon lemon zest

  • 4 ripe peaches, sliced and cubed

  • ¼ teaspoon Vanilla extract

  • One and half cups grams all-purpose flour

  • 1 and a half teaspoon baking powder

Creating the cake mix, and baking

1. Pre heat over to 185°C

2. Grease a 9-inch spring form cooking tin

3. In a small bowl whisk together the flour, baking powder and salt

4. In a large bowl beat together butter and sugar on medium to high speed until fluffy (4 to 5 minutes)

5. Beat three eggs, one at a time into the butter and sugar mix allowing them to fully incorporate into the batter before adding the next egg

6. Once mixture is well blended, beat in lemon zest and vanilla extract

7. Set your mixer to low and beat in your flour mixture, just until blended

8. Fold diced peaches into the batter then transfer batter to your spring form cooking tin

9. Bake in the center of oven for 45 minutes, or until a skewer put into the cake comes out clean

10. Remove from oven and let cool
