Preserved lemon mayonnaise

Home made mayo is quick and easy to make using only a few kitchen staples. This recipe elevates everyday mayo a notch or two with the addition of preserved lemons giving it an extra zing. The sharp lemony flavour will make a nice addition to salads and dressings but also pairs well with grilled meats and fish.

MAKES One small jar

Prep. time: 15mins


  • 1 egg yolk

  • ½ tsp dijon mustard

  • 1 small garlic clove – crushed

  • 1½ tsp white wine vinegar

  • ½ tsp castor sugar

  • 30g preserved lemon (flesh and skin, seeds removed)

  • 75ml sunflower oil


1. Put all the ingredients except the oil in a small food processor bowl.  2. Blitz well.

3. With the motor running, slowly pour in the oil to achieve a glossy firm mayo.

4. Transfer to a sterilized jar and refrigerate till needed.

5. Will keep for one week.
