Artichoke & rocket salad with preserved lemon mayo
A fresh, light and easy salad that comes together in a blink. Make the components well in advance and just toss together before serving.
SERVES 4 as a starter or 6 as a side
Prep. time: 5 mins
12 quarter preserved artichoke hearts (from 3 whole ones)
100 g rocket leaves
20 g fresh mint
20 g fresh parsley
Handful peashoots (optional)
2 – 3 tbsp. preserved lemon mayo
Salt and pepper
1. Drain artichoke hearts well.
2. Place the rocket leaves on a plate and roughly tear herbs over it.
3. Gently toss artichokes, rocket, mint, parsley, peashoots, olive oil, salt and pepper together.
4. Top with a generous dollop of preserved lemon mayoand serve.
